Food Safety Courses
Level 2: Award in Food Safety
The aim of this one-day course is to give delegates practical knowledge of the fundamentals of good practice and safe food handling.
Who should attend?
The course is recommended for anyone who is working in the catering and hospitality industries, food retail or manufacturing.
Course content
The course is informal and will cover topics including:
- Simple bacteriology
- Food poisoning & its prevention
- Prevention of food contamination
- Personal hygiene
- Design of premises & equipment
- Cleaning & disinfection
- Pest control
- Legal requirements under current legislation
Course book and a comprehensive delegate pack will be provided.
Duration
The course is of 6 hours duration and conducted during one day. It is followed by a short multiple-choice exam.
Qualification
All successful candidates will receive the nationally recognised Level 2 Award in Food Safety in Catering, Retail or Manufacturing.
Progression
Level 3 Award in Food Safety Catering.

Level 3: Award in Supervising Food Safety
The aim of this unique 2-day course is to equip persons in a supervisory position with adequate knowledge to ensure their company operates in a hygienic and efficient manner.
Who should attend?
The course is recommended for supervisors and middle management, and people running their own business where high-risk foods are handled. A level 2 certificate is recommended before attendance.
Course content
This is an intensive course and will be presented in a varied and interesting way and covers the following subjects:
- The costs of food poisoning
- Bacteriology
- Bacterial, non-bacterial food poisoning & foodborne infections
- Hazard analysis & HACCP
- Food contamination & its prevention
- Personal hygiene
- Food storage & temperature control
- Food preservation
- Design and construction of food premises & equipment
- Cleaning & disinfection
- Pest control
- Legislation
Course book and a comprehensive delegate pack will be provided.
Duration
There is a workbook to complete before the course which contributes towards the guided training hours required before sitting the exam. This should take around 8 hours to complete. Potential delegates should plan this work as soon as possible.
The course will be run over two days. The examination will be held at the end of the second day.
Qualification
Successful candidates will receive the nationally recognised Level 3 Certificate in Supervising Food Safety in Catering, Retail or Manufacture.
Progression
Level 4 Award in Managing Food Safety in Catering.
